I’ve been on a corn tortilla kick lately… It’s odd to me because I don’t normally like tortillas. I mean, I’m one of those people who prefer “naked burrito” or “burrito bowl” at your local “Mexican” joint. Maybe I just now realized that corn tortillas >> flour tortillas. At least in my book.
Huevos Rancheros
Heat up corn tortilla on a non-stick pan, crack 1 egg on top, sprinkle some salt, throw in some shredded cheddar cheese, and flip over once the egg white turns opaque. Cook for another minute, then flip over on a plate. Serve with pico de gallo, avocado slices, black beans**, and sour cream. Of course I put a lot of Tabasco on mine.
**For the black beans, I used the kind that comes in a can… I simmered the beans with sautéed onions, a pack of Sazon Goya, about a tablespoon of cider vinegar, and a bunch of cilantro that I wrapped together and later removed.
Beef Kimchi Tacos
Corn Tortillas. Shredded Cheddar Cheese. Black Beans**. Avocadoes. Sautéed Beef (salt + pepper + adobo seasoning). Lime Slices. Chopped Cilantro. Home-made Salsa. Chopped Kimchi.
